I use this stuffing in Cornish Game Hens, which are a bit greasier than
turkey I think. It always goes over well.
Ingredients:
1 cup Madeira wine
1/3 cup raisins
2 whole cloves
2/3 cup cooked brown rice
pinch ground ginger
pinch mace
1 Tablespoon melted butter
Combine Madeira, raisins, and cloves; bring to a boil. Simmer 5 minutes
to reduce in volume slightly. Remove cloves; strain mixture, reserving
raisins and wine. (Use the wine for basting the bird.) Combine raisins
with rice, ginger and mace; stir in butter.
You may need to increase the volume of ingredients for a large bird.
